Day 2

Last night wasn't bad. At the end of the day we were all alive and feeling fine. We ate spaghetti for dinner- gf rice pasta and paired it with some turkey meat in the spaghetti sauce. A side of corn and we were all set. Everyone ate their fill and we topped it off with a gf/df cookie that I had made (out of a box, don't remember the name).

Today has went okay. Isaiah hasn't really ate much. He finally ate some zucchini bread (we'll talk about that in a minute) and some hotdogs. He keeps asking for a banana, but payday isn't until Thursday. I'm glad though, it'll give him a couple of days to maybe experiment with other foods.

Breakfast was fruit. Lunch was hotdogs (no buns), sliced apples, and baby carrots. Isaiah ate ONLY the hotdogs, but everyone else ate everything.

Zucchini bread. To my kids, it's just "bread". I refuse to tell them it has zucchini in it.. Especially since they devoured it. I'll post the recipe in just a minute. I've been busy in the kitchen all day, I made the zucchini bread and then tweaked the recipe a bit to make some apple bread. I also have a meatloaf cooking that has zucchini, carrots, and celery in it. We'll see how it goes over at dinner.

I got the general recipe from Incredible edible Gluten-Free FOod for Kids by Sheri L. Sanderson.
Zucchini Bread
1/2 cup brown rice flour
1/2 cup tapioca flour
1/2 cup rice flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon xanthan gum
3/4 teaspoon salt
1 1/2 teaspoons ground cinnamon
1 egg
1 cup shredded, unpeeled zucchini
1 1/2 teaspoons vanilla
1/3 cup cooking oil
1 cup sugar
splash of rice milk

Sift together all flour, baking soda, baking powder, xanthan gum, salt, and cinnamon.
In another bowl, beat the egg. Add zucchini and mix well. Ad vanilla, oil, sugar, and half of the flour mixture. Beat well. Add rest of flour mix and a splash of rice milk. Mix well.
Pour batter into pan and bake 350 degrees for 55-60 minutes (mine was done closer to 30-45).

Variations for apple bread
Substitute shredded apple for zucchini

I also replaced the cooking oil with apple sauce and the sugar with 3/4 cup honey.

The zucchini bread was a HUGE hit! I'm waiting for them to get up from their nap to try the apple bread. Fingers crossed for the meatloaf.
