White Chicken Chili

My friend, Jerica, over at Noble Women 4 Christ has created a new link-up!

How neat is that? In fact, her first post is about some yummy sounding muffins! Be sure to check her link up!

Tonight we had white chicken chili! It was super yummy and cooked in the crockpot all day!

The best part? It's quick!

Boil a whole chicken until done. You can use any part of the chicken, if you'd rather. Or you could roast the chicken, but I prefer to boil it. Save three cups of broth.

Once the chicken is cooked, take the skin off and remove chicken from the bone. Shred it into nice bite size pieces.

You'll also need:
1 can (or the equivalent in dried, cooked) navy beans
2 cans (or the equivalent in dried, cooked) white kidney beans
Diced, green chilies (2 tablespoons or more)
Cumin, chili powder, salt, pepper, garlic and onions- to taste.

Add the chicken, 3 cups of broth, beans, chilies, and spices to crockpot and turn on low. Let simmer for 3+ hours.

Garnish with shredded cheese and sour cream, if desired.

And there you have it.... White chicken chili!
